And we think Kev is right! Although this philosophy shouldn’t just be limited to the items listed on your wedding registry.

I LOVE to pickle and make jams with seasonal produce so living in Dorrigo really suits me. There is an abundance of fruit and vegetables on offer throughout the year, everything from persimmons and blueberries to the humble choko.

It’s such a wonderful feeling to open the pantry and pull out a jar and pop it into a meal, whether that be adding syrupy candied cumquats to a chilled glass of champagne, or a spoonful of rich hibiscus jam onto a gooey chocolaty brownie or adding a dollop of freshly made strawberry jam to freshly buttered sourdough, the morning after a beautiful long lunch with friends.

Honestly, these little tart / sweet jewels of yumminess have a subtle kick of cinnamon & star anise that will add extra warmth to your pre-reception drinks or look amazing in personalised bottles to take home. Add chili for an extra kick!

My cumquats were foraged roadside in Bellingen on route to Dorrigo. Sourcing local produce is a nice touch if you choose the Bellingen Shire for your Wedding location.

The Recipe

I always use a basic sugar syrup recipe for candied fruit and homemade liquor cook ups and I recommend you considering experimenting in advance by adding different spice combinations to enhance the flavour of your cumquats. cinnamon, cardamom, star anise, clove and nutmeg all work beautifully to enhance flavour.
