Proposal Picnic Ideas | Dari’s Table

Spring has sprung so why make a booking at a restaurant when you can build a dream marriage proposal picnic from scratch and it’s as easy as picking up a few beautiful products at your local supermarket? The thought came to me when I was leaning on our kitchen counter, staring out the window unknowingly making my way through a whole tub of Dari’s Table Pine Nuts Hummus…  

Dari & Yehiel Kaplan are known for a passion for perfection and its evident when you open one of their dips. Their attention to detail is amazing and I’m sure a lot of that comes from Dari as she is a graphic designer with a fantastic eye for detail. It’s rare that you find a product that tastes even better then it looks when the product looks as wonderful as this! 

I have heard that Yehiel is a passionate chef who desires to cook nothing but the best. I have a food intolerance to garlic, so to find their pine nut hummus packing a punch without any garlic is incredible! Alternatively, they make an awesome Dari’s Table Hummus with roasted garlic and Pilpel Garlic dip, for all of you lovely people who adore garlic and everything that goes with it!

What really appeals to me is that in a more then 25 year obsession with cooking, chef Kaplan has learnt many things but none more important than the first rule for creating recipes: add nothing that’s not essential to the flavour and this is why their products stand out. Dari’s Kitchen provide good clean flavours that compliment important occasions perfectly. Pilpel and Dari’s Table range of dips are gluten-free, contain no dairy, no egg, no animal fat, no artificial colours or flavours and at the top of their priority list is to support our Australian farmers.

I contacted the wonderful people at Dari’s Kitchen a few years back now, purely to ask permission to blog about giving you a quality product to include in your proposal picnic hamper. I was planning on picking up some dips from my local supermarket to photograph but they were so incredibly kind and insisted on delivering a box of products to shoot for this post. I have personally tried everything* (mostly without garlic but a few with, because I couldn’t resist) and I can honestly say that you can’t go wrong with any of the Dari’s Table or Pilpel range as their products are fantastic.

If you want to add colour, natural flavour and a whole lotta love to your proposal experience, just pack a tub or two from the range, a few crackers and a bottle of sparkling and “Hey presto” you have the perfect picnic. With a combined experience of over 50 years, Dari & Yehiel have produced exactly what was missing on the shelf (and in your picnic basket); a top-quality healthy product with a look that reflects the simplicity of their creation.

Are you planning your wedding day but finding it extra challenging due to the uncertainty of COVID-19?

Fire and Food by Kenton Shaw, is a unique catering solution for your intimate country style wedding. Kenton’s aim is to provide you with a space that brings your favourite people closer together while also making it easier to ensure a COVID safe environment.

The Concept

As you are hitting the snooze button, Kenton is stoking the open fire pit in preparation to slow roast an assortment of hung meats including: juicy legs of lamb and pork, beef strip-loin, chicken and whole salmon.

Expect smoke and flames (as well as the tantalising aroma of freshly cooked damper on the air) as you gather around the fire at your reception. Sip on a glass of chilled champagne or enjoy a hot mulled wine and relax with your guests while Kenton works his culinary magic. Look on as Kenton prepares and cooks whole QLD blue pumpkins under hot coals, an experience not to be missed!

Due to the potential cooking time variations when roasting in this fashion, it’s best to plan your Fire & Food event not so much to a strict timetable.

Rest assured though, your guests will enjoy the atmosphere and theatre that is the slow cooking experience and with all those amazing smells tantalising their tastebuds, it will only give them something special to look forward too when it’s all good and done!

During COVID-19, this type of menu would suit hand served grazing plates on arrival and long bench style tables for the main with individual plates served by Kenton’s friendly team. Post pandemic, think a long buffet grazing table on arrival and the main to follow as a buffet, or share plates placed in the middle of long communal tables.

Chocolate Dipped Strawberries with Kick

Now, I don’t consider myself a total domestic goddess … but I do know goodness when I taste it.

I have always had a thing for chilli (chili), chocolate and cinnamon so I took a page from my very own (and very successful molten chocolate lava cake recipe) book and integrated these 3 flavours into something a little easier to transport.

Spice up your Dorrigo surprise marriage proposal or wedding day experience in the Bellingen Shire with the delectable chocolate-covered strawberry – a perfect accompaniment to your post-proposal (or wedding photography location) glass of Moet.

It is also worthy to note that although strawberries are typically grown in Australia throughout the year, in temperate regions they are more locally available from October to June.

Ingredients:

  • 12 small strawberries or 6-8 largish strawberries
  • 50 dark chocolate Cadbury melts
  • 20 milk chocolate Cadbury melts
  • 2 small birds eye chillies to add some SPICE and HEAT things up
  • One teaspoon of ground cinnamon because everyone loves a nice warm cinnamony HUG.

Other stuff you will need:

  • A glass bowl and microwave or working stovetop

Chocolate will burn easily so aim to use a glass or metal bowl over a saucepan of simmering water or a use a microwave-proof bowl in the microwave. To be absolutely sure that you don’t spoil your chocolate and have it go all crusty and hard, follow the melting instructions on the back of the chocolate pack. Easy stuff.

Cumquat Champagne Deliciousness

And we think Kev is right! Although this philosophy shouldn’t just be limited to the items listed on your wedding registry.

I LOVE to pickle and make jams with seasonal produce so living in Dorrigo really suits me. There is an abundance of fruit and vegetables on offer throughout the year, everything from persimmons and blueberries to the humble choko.

It’s such a wonderful feeling to open the pantry and pull out a jar and pop it into a meal, whether that be adding syrupy candied cumquats to a chilled glass of champagne, or a spoonful of rich hibiscus jam onto a gooey chocolaty brownie or adding a dollop of freshly made strawberry jam to freshly buttered sourdough, the morning after a beautiful long lunch with friends.

Growing up I have incredible memories of spending long summers on my grandparent’s farm in Murwillumbah so a move to the country has always been on the cards…

One day as Ralf and I were sitting quietly on a beach at the tail end of a weekend away from the city, Ralf said :

“Let’s move to Dorrigo”

A week later I was awe-struck by the countryside as we made our way up Dorrigo Mountain via motorbike, just on sunrise. From that moment I knew where we needed to be and 4 years later – here we are – living in Dorrigo!

It was seriously the best decision. Ever.

Although Covid-19 has changed the way we celebrate with our nearest and dearest, The Wedding Blog aims to share ideas and helpful information so you can continue to plan your perfect proposal or dream wedding day, your way.
